Minnesota Starvation Study: Making Sense of Restrictive Eating Disorder Behaviors

It is not uncommon for a majority of those struggling with an eating disorder or disordered eating habits to have an overwhelming amount of thoughts and concerns regarding food, body and weight. In the 1940’s a scientific study was launched to understand the impact starvation had on the body and mind. The outcome was an increase in food preoccupation, urges to overeat, an impact on mood and distorted self-image.
